Chef’s Corner with Philippe Chow

journeyPod recently enjoyed a tasting at Philippe Chow, an upscale Chinese restaurant in West Hollywood. The Seven Pound Peking Duck is a must and certainly worth the 45-minute wait. Inside scoop: Seven pounds sounds like a lot—it’s not. Trust us! A few other signature dishes from Chef Philippe included chicken satay skewers (the sauce alone is worth it!), and crispy seaweed, better known as “gambei”. And for dessert we enjoyed the most amazing fruit sorbet. Our fav: the red grape…with real pieces of grape skins.

What’s the most unique ingredient you have cooked with?
Pickle sauce. It sounds weird but it adds a great background flavor

It’s your night off, where do you go for drinks and dinner in Los Angeles?
Chinatown and Tower Bar at the Sunset Tower

What seasonal specials do you have going on now?
Coming up soon for summertime we will have soft shell crabs. Now, for winter we have fresh scallops.

Who is the biggest celebrity you have cooked for?
Oprah. She enjoyed all my signature dishes from the tasting menu.

What’s the most memorable meal you have cooked?
I cooked at the Sundance Film Festival.

What is the craziest request you received?
Someone once asked me to be the Chef on a camping trip!
