Definitely start off with the delicious perigourdine poached egg.  The duck confit is said to be absolutely terrific, and if you love french fries, you’ll love Chef Sebastien’s triple fried french fries.

journeyPod enjoyed a delicious dinner prepared by Chef Sebastien then sat down to have a one- on-one conversation.

We’ve been hearing so much about your triple fried french fries. What is the big secret?

 I cook them three times: in duck fat, in duck fat, and in vegetable oil. They are crispy and perfect.

Where do you dine in LA?

The Toast Bakery & Cafe is my favorite for breakfast…and it’s near my house.  I also enjoy La Cachette Bistro on Santa Monica Blvd. 

What is the first thing you notice when you enter a restaurant? 

I notice the atmosphere and the lighting.

When did you start cooking?

My Mom and Dad owned a restaurant so I started cooking very young; I was probably about 5. 

If you weren’t a Chef, what would you be?

A gardener.

If we raided your fridge at your home, what would we find?

Tomatoes and cheese.

What is the most unique food you have ever tasted?

The eggs of ants while in Mexico. They are considered a delicacy. 

What cuisine inspires you?

I really enjoy Spanish cuisine. The mix of land and sea is actually a really smart way of cooking. I also enjoy Japanese tempura.

Chef Sebastien, what advice would you give cooking enthusiasts?

Have fun!  Enjoy your time cooking. There shouldn’t be any pressure.

If you found yourself in a British Pub, what would you order?

A Guinness.
