Chef’s Corner with Chef Rich Edes of Beacon Hill Hotel & Bistro

We sat down and chatted with Chef Rich Edes of Beacon Hill Hotel & Bistro, while enjoying a lunch tasting of Day Boat Scallops with Uni, Line Caught Cod with clams and potato fondant, Long Island Duck Breast with Risotto, and Warm Chocolate Pudding with Salted Carmel. Chef gave us some inside scoop on Boston restaurants and the Parisian philosophy of food.

What do you look for or notice when you visit a restaurant?

I’m a china snob. I always turn over the plates to see where they are from, what brand they are. My favorite china is Bernardaud.

What are your favorite restaurants in Boston for a night out on the town?

Coppa and Toro.

We’re on a quest for the best Bloody Mary in Boston. Where should we go?

East Coast Grille in Cambridge, Highland Kitchen in Somerville, or Gargoyles by Davis Square.

Where is your favorite travel destination? And what recipes or flavors have you brought back from there?

Paris! I bring back the philosophy—not the dishes.

What “philosophy” are you referring?

Whether you visit a small bistro, or a pub you are well taken care of. It’s the philosophy. It’s their way of life. The simplicity of the food: it’ fresh, clean and it just tastes right.

Tell us a little about your upcoming Swedish Midsummer Dinner.

It commemorates the Swedish celebration of the Summer Solstice and will be available in addition to our regular Dinner Menu from Monday, June 20 through Sunday, June 26 
5:30 p.m. to 11p.m. (10 p.m. on Sunday). Menu items include traditional Swedish dishes like Cured Salmon, Herring, Grilled Pork, and Pavlova. The dinner is $40 per person and reservations can be made on the Website at: http://www.beaconhillhotel.com
